Too Blessed

To be stressed!

                I am the Queen of stressing out. Ask my roommate from last year, I stressed over all things big & small, my problems & others. She even tried reading off of WebMd.com what stress was going to do to me. It never worked! So, I’ve come to the conclusion that I will just always be stressed…learn to live with it? Sure, but now it’s time to start counting me blessings in life, not just counting the things that cause me to stress.
Stressed spelled backwards equals…DESSERTS!!! I’ve decided to make one new or old cookie recipe a week for the year. As I put in each ingredient, I must think of something I am thankful for, or a blessing in my life, and give thanks to God.
                Last week, I made Chocolate Chip Cookies….a favorite in this house.
Chocolate Chip Cookies
2 tsp. Vanilla
1 c. Shortening
¾ c. Brown Sugar
¾ c. White Sugar
2 Eggs
1 tsp. Baking Soda in 1 tsp. hot water
2 ½ c. Flour
1 tsp. Salt
1 c. nuts (optional, I never do, because Dad & B would just not have it. They hate nuts!)
1 bag of Semi-sweet Chocolate Chips

Cream shortening, sugar, eggs, vanilla, & baking soda. Add dry ingredients & mix well!

Bake at 375 for 12-14 minutes I use a baking stone, they always seem to get really crunchy if I use a baking sheet. Enjoy!!

U A sister-in-law who gets super excited about cookies & waits patiently for the first batch so she can sneak a cookie before A.
U A house which I can bake in.
U The quality family spent enjoying cookies.
U Having Fridays off so I can stay up later to bake!
U Leaving in the mornings, and hearing a sweet “I love you” from R.
U Waking up on mornings off to find that Kitt has jumped in my bed.
U Being able to lead a Confirmation group this year.
U Being able to put aside a few hours to catch up with friends.
U A sister who can bake cakes & cupcakes…we make a good pair!
